RECIPE

Recipe Name: Afro/Pomo Vegan sausage kale soup and Acorn Cornbread

Ingredients & Method

One thinly sliced red onion

1/2 bunch of celery diced

2 carrots diced

1 bunch of maitake mushrooms

Roast in a large soup pot w/cooking oil

Add, 1 tb of coriander, cumin and smoked paprika, and 2 tb of salt

Add, lite life veggie sausage 1/2 log ground

Add, 4 diced yukon potatoes

Add, 6 cups water

Bring to boil with covered lid

Add, one bunch of kale

Fire roast 4 hatch green chiles, with salt/oil and one large jalapeno, cook until blackened, cut and take out seeds, dice and add to soup and cover.

Add 2  more cup of water and salt to taste

Move pot to high heat for 10 min uncovered until potatoes soften.

Serve with seeded sourdough or acorn cornbread.
